This winter, Arrogante introduces a limited-time collaboration that redefines Italian dining through a contemporary lens. Partnering with Cut Caviar, the Dubai-based Italian concept unveils an exclusive co-created menu available from 11 December 2025 to 11 January 2026, inviting diners into a refined yet playful dialogue between expressive Italian flavours and modern caviar craftsmanship. Designed as a meeting point of two distinct identities, the collaboration celebrates contrast, creativity, and shared culinary confidence.
At the heart of the menu is a thoughtful balance between Arrogante’s ingredient-driven Italian ethos and Cut Caviar’s precision-led approach to luxury. Each dish has been carefully composed to allow premium caviar to elevate, rather than overshadow, the natural character of the ingredients. The result is a menu that feels indulgent yet intentional, where modern luxury is expressed through restraint, texture, and clarity of flavour.


The creative direction is led by Executive Chef Koyi, the culinary force behind Salvaje Group Dubai, who has played a pivotal role in shaping Arrogante’s evolution since joining the group in 2024. Drawing from his Peruvian heritage and Japanese lineage, Chef Koyi brings a global sensibility informed by experience in world-renowned kitchens, including Lima’s celebrated Maido. His approach to flavour layering and precision allows Italian classics to be reinterpreted with confidence and contemporary flair.
The dining journey opens with refined starters that set the tone for what follows, before transitioning into a saffron risotto built around Royal Baeri caviar and Gambero Rosso tartare. The dish captures the essence of the collaboration—comfort and elegance meeting modern technique—while remaining true to Arrogante’s expressive personality. Each course is designed to feel cohesive, guiding diners through a narrative rather than a sequence of standalone plates.
