HANU x Chef Robin Höfer: A One-Night-Only 12-Course Culinary Journey at The St. Regis Gardens

In an extraordinary fusion of culinary vision and artistry, HANU, Dubai’s elevated destination for contemporary Korean cuisine, announces an exclusive 12-course dining collaboration with acclaimed European chef Robin Höfer. This one-night-only gastronomic experience will unfold on Friday, 21 June 2025, at HANU’s intimate Chef’s Table at the St. Regis Gardens, Palm Jumeirah.

Uniting the soulful depth of Korean traditions with the precision and finesse of modern European cooking, the event promises to be a celebration of cross-cultural creativity, technique, and storytelling — served across a meticulously curated menu limited to only 20 guests.

A Dialogue Between Culinary Cultures

HANU’s Executive Chef Kyung Soo Moon, known for his elevated interpretation of Korean heritage, joins forces with Chef Robin Höfer, whose culinary path spans MICHELIN-starred kitchens across Europe and notable time at Ossiano Dubai. Höfer’s food is rooted in nature, memory, and minimalism, while Chef Moon brings the emotive richness and structure of Korean cuisine, making this collaboration a true culinary symphony.

The Menu: A 12-Course Tapestry of Innovation and Heritage

Designed as an immersive tasting journey, the evening’s 12-course menu unfolds like a narrative — weaving together influences from Europe, Korea, and the Middle East. Expect refined contrasts and bold technique throughout, with highlights such as:

  • Golden Egg with Sago Pearls, Carabinero, Coconut and Gochujang
  • Kimbab with Crispy Nori, Korean Rice and Salmon Roe
  • Hamachi with Corn, Coriander, Kimchi and Leche de Tigre
  • Patagonian Toothfish Tempura in Ajiso Broth with Sea Urchin
  • Kobe Striploin glazed with Galbi, paired with Wasabi Kimchi and Traditional Banchan

To close the evening on an ethereal note, guests will savour a trilogy of dessert courses: Korean Pear with Black Lemon and Ginger, Omija Apple Blossom, and a refined Dasik, the traditional Korean pressed tea cookie.

An Evening of Intimacy and Immersion

The evening will be held at HANU’s Chef’s Table, an exclusive dining enclave within the restaurant, offering an immersive view of the chefs at work. Two seatings are available — at 6 PM and 9 PM — with only 10 guests per session to ensure an intimate and personalized experience.
