A New Flame: ALBA Unveils a Fire-Kissed Japanese Menu in Downtown Dubai

ALBA, Downtown Dubai’s beloved fine-dining address, has once again redefined Japanese fusion with the launch of a compelling new menu. Guided by the culinary brilliance of Group Executive Chef Vladimir Chistyakov, the reimagined offering is a rich tapestry of fire-grilled finesse, premium wagyu, and bold Japanese flavours—meticulously curated for Dubai’s discerning gourmands.

Embodying the elegance and energy that define ALBA, the refreshed menu spotlights a powerful robata grill selection and artful maki rolls. The Salmon Avo and Rainbow Roll sit alongside delicacies like King Crab, Unagi, and Tuna—each roll a delicate balance of freshness, texture, and technique. These are not simply starters, but statements of ALBA’s continued commitment to culinary artistry.

Wagyu takes the limelight in inventive new forms—from the decadent Wagyu Roll layered with Mexican avocado, Oscietra caviar and truffle oil to the comforting Wagyu Yakinuki bowl and the indulgent A5 Wagyu Katsu. Flame-seared to perfection, mains like the Wagyu Ribeye and Fillet Mignon, each finished over robata flame and paired with truffle or miso accents, underscore ALBA’s mastery of grilling.

Expanding its offerings for every appetite, ALBA also introduces a hearty selection of Donburi rice bowls. Think: crispy Chicken Teriyaki with furikake, a golden Beef Katsu Curry, or a Mushroom Tofu bowl that delivers umami satisfaction for plant-based palates. These soulful dishes offer a comforting counterpart to the precision of the sushi and robata courses.

Seafood, too, plays a vital role in the menu’s storytelling. The Robata Grilled Seabass arrives nestled on a bed of kale and avocado with a whisper of chili garlic; the Grilled Tiger Prawn adds a Cajun twist, and the eel-rich Unagi Bowl is a standout with its deep, earthy flavours. For noodle lovers, the Truffle Mushroom Noodles stir together shiitake, galbi sauce, chili garlic, and a heady drizzle of truffle oil—a dish that feels both grounding and indulgent.

No meal at ALBA is complete without a sweet note. Enter Kakigori, a traditional Japanese shaved ice dessert that is as visually arresting as it is refreshing. The menu features seasonal interpretations like Tropical Breeze (mango, coconut), Matcha Garden (matcha, watermelon), and Caramel Mist (dulce de leche) — a finale as poetic as the sunset-inspired ‘Y?gure’ Afternoon Tea served daily.

Beyond the plate, ALBA’s beverage program continues to dazzle, offering rare sake, expressive wines, and Asian-inspired cocktails, all designed to complement the bold new dishes. Guests seeking a nocturnal escape can slip behind the veil of the Himitsu Bar—a hidden speakeasy where curated cocktails and late-night elegance round out ALBA’s uniquely layered experience. A feast for all senses, ALBA is where fire meets finesse, and flavour becomes art.
