The Delano Way unfolds as a 10-seat, chef-led Japanese dining experience on Bluewaters, where A5 wagyu, seasonal seafood and immersive culinary theatre take centre stage.

Delano Dubai is taking its dining philosophy to the grill.

Launched on 29 January 2026, Teppanyaki: The Delano Way brings an intimate Japanese dining experience to Bluewaters, designed for just 10 guests per sitting. The concept centres on a progressive set menu prepared live by a dedicated teppanyaki chef, where craftsmanship and quiet theatre unfold across the counter.

A Chef-Led Culinary Performance

At the heart of Teppanyaki: The Delano Way is craftsmanship. Premium ingredients — including A5 wagyu and seasonal seafood — anchor the experience, while vegetarian alternatives are available upon request.

The menu begins with a palate-cleansing opener before progressing to dishes such as salted grilled edamame, Akami Maguro sashimi with yuzu ponzu, and chawanmushi crowned with king crab. Richer courses follow, including foie gras glazed in miso mirin and A5 Wagyu served with fresh wasabi and garlic fried rice.

Dessert remains rooted in refinement, with creations such as Ishigo Shiso accompanied by soya foam and calamansi sorbet — compositions that prioritise clarity of flavour and disciplined technique over excess.

From Counter to Cocktail

The experience extends beyond the grill. Evenings conclude at Rose Bar, where guests transition into Delano’s signature intimate setting — soft lighting, subdued atmosphere and unhurried pacing — for a post-dinner cocktail.

Offered from Wednesday to Sunday, with two sittings at 7pm and 9pm, the set menu is priced at AED 790 per person.

Precision, Connection and Pure Craft

Teppanyaki: The Delano Way reflects a deliberate approach to scale and experience. With only 10 seats per service, the concept prioritises connection between chef and guest, placing emphasis on craftsmanship, flavour and atmosphere.

In a city known for grandeur, Delano Dubai’s latest introduction leans into intimacy — where precision, theatre and extraordinary flavour converge in a format designed to linger long after the final course.
