This September, Dubai welcomes Cut Caviar, a Mediterranean-inspired restaurant where global caviar excellence meets the artistry of Sicilian seafood. Opening at the new Mileo Hotel The Palm, the concept blends immersive dining with refined luxury, offering everything from Italian breakfast patisserie to late-night bites, all complemented by a standout mixology programme and an exceptional wine and champagne list. With live cooking moments, rare caviars, and Mediterranean flavours, Cut Caviar sets the stage for one of the most anticipated dining experiences of the season.

Global Caviar Excellence
Guests will discover rare and exceptional caviars sourced from carefully selected farms around the world. Each variety is chosen for its unique character and consistent quality, bringing smooth pearls, rich textures, and refined flavour to the table.

Seafood from Sicily’s Deep Red Fishing Boats
Highlighting the best of the Mediterranean, Cut Caviar presents premium prawns, langoustines, and delicacies flown directly from Sicily. Each dish showcases the freshness and depth of flavour only possible from artisanal sourcing.

Immersive Dining & Live Cooking
The Cut Caviar experience goes beyond the plate. With live cooking shows, tableside artistry, and interactive dining moments, every meal becomes a performance-led journey of flavour, fire, and finesse.

Morning to Midnight Dining
From delicate Italian breakfast patisserie in the early hours to refined à la carte dinners, late-night bites, and curated set menus, Cut Caviar welcomes guests daily from 9 AM to 3 AM — a destination designed to evolve with the day.

The Cocktail Bar
A distinctive mixology programme crafted by expert bartenders pairs seamlessly with the menu. From bespoke cocktails to rare labels on the fine wine and champagne list, the bar extends the dining experience into an elegant late-night ritual.
