Revolver Dubai fires up something truly special—a one-night-only culinary collaboration between award-winning Chef Partner Jitin Joshi and acclaimed Emirati chef Ali Yazdi. Known for its flame-forward cuisine and bold experimentation, Revolver’s first pop-up of the season promises a nine-course menu that is as vibrant and unapologetic as the venue itself. Located in the architectural marvel of The Opus by Zaha Hadid in Business Bay, this immersive dining experience is set against a backdrop of sleek interiors, a live wood-fired open kitchen, and a lush outdoor terrace.

Chef Jitin Joshi brings over two decades of global culinary pedigree to the table, having led celebrated kitchens like Michelin-starred Benares and Gymkhana in London. His refined style melds French technique with South Asian soul, honed further through stints at At.mosphere and Amal in Dubai. Joining him is Chef Ali Yazdi, the culinary force behind SLAW Burger, whose Emirati roots and innovative palate lend an exciting dimension to the evening’s menu. Together, they’ve created a one-time-only tasting that explores flavour, heat, and narrative through fire.

The experience begins with a King Crab Tartlet brightened by a Somtum-style yuzu dressing and green papaya. It’s a lively nod to Southeast Asian freshness. Next is Revolver’s own Truffle and Morel Kulchette, rich and flaky with parmesan and fresh truffle. Chef Yazdi then pays homage to Emirati heritage with his Wing Majboos—chicken crisped and filled with machboos rice, offset by yuzu gel and black lemon powder.

A 12-hour confit Duck Cigar in golden filo delivers deep savoury notes, while a grilled Cilantro Seabass marinated in coconut carries through the South Asian warmth. The menu takes a street-style turn with a Wagyu Canoe Marrow Slider, striking a fine balance between indulgent and elevated. A citrus palate cleanser arrives before the centrepiece: Chef Yazdi’s signature Lamb Shank Claypot Rice—eight-hour braised lamb with caramelised onions and Japanese rice that speaks to comfort and complexity in equal measure.

The meal concludes with a playful Matcha Cheesecake, paired with a smooth Bueno sauce—unexpected and satisfying. This is not your usual chef’s table. Designed as a kitchen takeover, not a traditional pairing, the collaboration leans into spontaneity, boldness, and flavour that disappears the next day. Future pop-ups at Revolver will continue to flip the script, blending innovation with immersive culinary artistry.
