LOONA’s Refined Set Dinner Brings Bold Italian-Russian Fusion to Dubai

In the heart of Downtown Dubai, LOONA unveils a culinary experience that seamlessly blends refined elegance with unexpected flair. The new LOONA RUSSA set menu reimagines modern Italian cuisine through the lens of premium Russian ingredients, resulting in a sophisticated dining journey that is both grounded in tradition and confidently experimental.

Chefs Artem Losev and Vitaly Istomin, known for their fearless creativity and precise technique, have designed the menu with a keen sense of contrast—each course unfolding with layers of flavour and tactile nuance. The opening act alone sets the tone: Eastern scallops delicately paired with black caviar, Wagyu fried dumplings with a crisp golden edge, and tender crab balanced by the earthiness of morels. These starters don’t just whet the appetite—they establish a dialogue between cultures, ingredients, and textures.

Mains continue this thoughtful interplay. The now-signature caviar pizza, elevated with chorizo and buffalo mozzarella, challenges expectations with flair, while slow-cooked beef ribs paired with a silky shallot purée offer a comforting, robust anchor to the experience. The wood-fired influence remains, but it is filtered through the lens of a global pantry and a distinctly European sensibility.

Desserts at LOONA have never been an afterthought, and the LOONA RUSSA finale is no exception. A gently spiced “Chu” chocolate dessert brings subtle heat, offset by delicate sesame candies glazed in chestnut honey. The soft honey cake recalls nostalgic flavours while the pomegranate sorbet lifts the palate with a final, refreshing note—bright, tart, and beautifully composed.

Set in the chic surrounds of Vida Downtown Residences, LOONA continues to position itself as one of Dubai’s most intimate yet forward-thinking dining destinations. The interiors reflect the menu’s ethos—polished but never fussy, warm yet layered with detail. It is a place where texture and tone matter as much as taste.

“Each dish is a fusion of innovation, comfort, and culinary pleasure,” says co-founder Anton Pinsky. “With this menu, we aimed to rethink the conventions of modern Italian cuisine while preserving its soul.” It’s this delicate balance—between rethinking and remembering—that makes the LOONA RUSSA experience so compelling.

Available daily from 3:00 pm to 9:00 pm, the new set menu invites guests into a world where premium ingredients meet playful technique, and where the familiar becomes quietly thrilling. For those looking to dine with intention, LOONA RUSSA is not just a meal—it’s a culinary narrative waiting to unfold.
