One&Only One Za’abeel adds another jewel to its crown with the debut of Maison Devoille, a refined pastry boutique and champagne café helmed by two-time Gault&Millau UAE Pastry Chef of the Year, Christophe Devoille. Tucked within the resort’s first-floor lobby, this elegant space blends the timeless artistry of French pâtisserie with thoughtful storytelling and quiet luxury. Here, handcrafted cakes, intricate viennoiserie, and fine champagne converge in what Devoille describes as “a symphony of taste.”

From the outset, Maison Devoille is designed to delight the senses. Whether you linger for a mid-morning tart and tea, toast with a glass of champagne, or take away a meticulously crafted creation, every interaction is intentional. Inspired by the grand maisons of Paris and animated by the chef’s precision-led philosophy, each pastry is made individually — never sliced or pre-portioned — ensuring the integrity of the experience remains whole. Seasonality and terroir guide the menu, with the “Culinary Couture” collection introducing limited-edition pieces in rhythm with the world of art, fashion, and culture.

The venue itself is a study in refined elegance. Art Deco interiors feature soft blush pinks, olive greens, and brushed gold, nodding to the glamour of 1920s Paris while echoing the architectural daring of One Za’abeel. A sculptural Champagne Bar anchors the space, framed by a luminous petal-shaped glass counter. At the core of Maison Devoille is a deep reverence for the craft. Each creation begins with the best seasonal ingredients — think Tahitian vanilla, Amalfi lemons, French butter, and Valrhona chocolate — and is shaped by hand with uncompromising technique.
