This July, Mandarin Oriental, Muscat unveils a culinary journey of rare distinction as two celebrated chefs come together for an exclusive Four Hands Dinner at Essenza. From the 17th to the 19th, the beachfront restaurant will host Chef José Barroso—Michelin-starred Head Chef of Tasca by José Avillez at Mandarin Oriental Jumeira, Dubai—alongside Essenza’s own Head Chef Davide Borin, in a vibrant celebration of coastal cuisines and Mediterranean heritage.
Chef Davide Borin brings a refined Italian perspective shaped by more than 15 years of international experience, with roots in his native Veneto and culinary stops in Italy, Hong Kong, and the Middle East. At Essenza, Borin is known for honouring Italian tradition while embracing modern influences, crafting dishes that feel simultaneously nostalgic and new. His warm, considered approach sets the tone for Essenza’s contemporary Italian soul.


In contrast yet perfect harmony, Chef José Barroso draws upon Portugal’s bold culinary identity. Having honed his craft in Lisbon, New York, and now Dubai, he leads Tasca—the UAE’s first Portuguese restaurant to receive a Michelin star, a title it has held for four consecutive years. Barroso’s cooking is heartfelt and expressive, steeped in family memories and shaped by regional ingredients, resulting in dishes that are soulful and generous in spirit.
Together, the chefs have curated a five-course tasting menu that reflects both their culinary identities while spotlighting fresh Omani produce. Expect a fusion of flavours that journeys across continents—from Wagyu Tartare Cones and traditional Portuguese Cod Cakes to the unmistakable richness of Sicilian Caponata. Dishes such as Truffle Pizza and Vitello Tonnato nod to Italy’s timeless flair, while Garlic Prawns and a standout Pasta Mista “Allo Scoglio” featuring Omani lobster and octopus express the duo’s shared coastal inspiration.




The evening concludes with two exceptional desserts: Portugal’s beloved Pastel de Nata, baked with characteristic flake and custard finesse, and Essenza’s signature Tiramisu della Casa, theatrically assembled tableside. Each dish is a tribute to tradition, elevated with technique and delivered with warmth.
