Mekong at Anantara Mina Ras Al Khaimah Welcomes Two Michelin-Recognised Chefs for a Season of Asian Gastronomy

As Ras Al Khaimah’s dining scene continues to evolve with quiet confidence, Anantara Mina Ras Al Khaimah Resort elevates the conversation through a refined series of culinary showcases at Mekong, its signature Asian dining destination set beside tranquil lagoons. This festive season and into the new year, the resort invites guests to travel across Asia through flavour, hosting two Michelin-recognised chefs whose distinct culinary philosophies reflect both heritage and innovation.

The series opens in December with Chef Noom, Executive Chef of Bangkok’s acclaimed Chim by Siam Wisdom, who brings contemporary Thai cuisine to Mekong on 19 and 20 December, from 7:00 pm to 11:00 pm. Renowned for leading Chim by Siam Wisdom to nine consecutive Michelin stars and earning recognition among Tatler Asia’s Top 20 Best Restaurants in 2024, Chef Noom’s approach is rooted deeply in Thai culinary tradition, refined through European techniques shaped by his experience at globally respected kitchens including Blue Elephant, Thai Square, Sketch, Zuma, and Gordon Ramsay. His reputation is further defined by his achievements as a Thai Iron Chef winner and judge on Kitchen Wars Thailand, roles that reflect both technical mastery and creative authority.

At Mekong, Chef Noom presents a five-course tasting menu that distils the essence of Thai cuisine into a modern, elegant narrative. Dishes such as grilled scallop with gorlek sauce, lobster paired with mango and chilli relish, and singhol curry with tender beef cheek showcase a balance of bold flavour, nuanced spice, and visual restraint. Each course is designed to feel expressive yet composed, offering diners a sophisticated interpretation of Thailand’s rich gastronomic heritage. The experience is priced at AED 595 per person, inclusive of soft beverages, with an optional wine pairing available for AED 200, and seating remains limited to preserve the intimacy of the evening.

In January, Mekong’s culinary journey continues with the arrival of Chef Chanoh Lee, whose contemporary vision of Korean cuisine has earned international recognition. Appearing on 23 and 24 January 2026, Chef Chanoh Lee brings a globally informed perspective shaped by training in Australia, France, and the Netherlands, while remaining deeply connected to Korean ingredients and traditions. His work has been featured in collaborations with luxury brands and hotels across the Middle East, positioning him as a leading voice in modern Korean gastronomy.

Chef Chanoh Lee’s five-course tasting menu reflects harmony between tradition and innovation, presenting Korean flavours with refinement and balance. Highlights include butter-poached lobster with doenjang sauce, uni and scallop finished in a delicate soy glaze, and braised short rib paired with aged white kimchi. Each dish speaks to Korea’s emergence as one of Asia’s most influential culinary movements, interpreted through an artistic lens that aligns seamlessly with Mekong’s flavour-driven philosophy. The menu is offered at AED 595 per person with soft beverages included, alongside an optional wine pairing for AED 200, with reservations required due to limited availability.

Together, these guest chef experiences underscore Anantara Mina Ras Al Khaimah Resort’s commitment to bringing global culinary excellence to the emirate. As General Manager Ramsey Saarany notes, the series reflects a dedication to offering exceptional dining experiences that allow guests to explore diverse cultures through taste, all within a setting defined by serenity and considered luxury. With Mekong as its stage, this season of Michelin-recognised showcases positions Ras Al Khaimah as a destination where refined travel and meaningful gastronomy increasingly converge.
