Dubai’s ever-evolving dining scene has a new firestarter. INA, the latest concept to open at J1 Beach, introduces an elevated open-flame culinary experience that is raw, refined, and deeply rooted in instinct. Conceptualised by Fundamental Hospitality in collaboration with internationally renowned Chef Glen Ballis, INA promises more than just a meal—it delivers a sensory journey shaped by fire, craftsmanship, and connection.

At the heart of INA is a primal philosophy: “fire never fails.” Here, fire isn’t just a cooking method—it’s the soul of the kitchen. Using elemental techniques like smoking, grilling, and roasting, the menu pays homage to simplicity while elevating every bite through bold ingredients and contemporary flair. Signature small plates like Westholme beef tartare with Kaviari caviar or Uzbek tomato carpaccio lay the foundation, while dramatic centrepieces such as Kamchatka crab rice or Irish Silver Hill duck make INA a place to gather, feast, and remember.

The space itself is a tribute to fire’s visceral beauty. Designed with warm, earthy textures and glowing amber tones, INA’s bespoke interiors offer a seamless blend of coastal calm and smouldering sophistication. Whether dining under the stars with the retractable roof open or enjoying the refined comfort of the climate-controlled interiors, guests are enveloped in an atmosphere that evolves from serene lunches to ambient, music-infused dinners.

More than a restaurant, INA is an immersive lifestyle destination. It’s a place where food, people, and energy collide. As the evening unfolds, so does the space—inviting guests to linger, move, and connect. Cocktails flow, conversations spark, and firelight flickers across every corner of the space, making each visit a chance to celebrate the moment, whether it’s an intimate dinner or a spirited gathering.

At the helm is Chef Glen Ballis, whose global culinary journey infuses INA with authenticity, flair, and storytelling. Known for his honest, ingredient-led approach, Glen channels decades of expertise into a menu that captures both emotion and excellence. INA marks his first venture in Dubai, and his arrival signals a bold new era in the city’s dining narrative.

INA is not just a restaurant—it’s a feeling. It’s the sound of flame meeting steel, the aroma of smoke rising from the grill, and the warmth of a shared table. From the first bite to the last sip, INA captures the essence of Dubai’s dynamic, global food scene—fiercely creative, wildly flavourful, and unapologetically alive.
